Stay cool with these summer recipes!
Stay cool with these summer recipes!

Forget heavy, steaming meals that make you tired. It's time for dishes that are quick to prepare, require little cooking effort and also cool you down from the inside. Let's take a look into the world of summer home office cooking!

1. cool thirst quenchers for full concentration 💧

The top priority is always: drink, drink, drink! But who says water has to be boring?

The stylish thirst quencher: Infused Water Deluxe 🥒🍋

  • Ingredients: A carafe of water, fresh cucumber slices, a few mint leaves, lemon slices or lime wedges, optionally a few berries (raspberries, blueberries).
  • Preparation: Add all the ingredients to the water and leave to infuse in the fridge for at least 30 minutes.

Why is it so good? Refreshes, detoxifies easily and is a super tasty alternative to soft drinks. The mint also has a cooling effect.

The healthy pick-me-up: iced tea with no regrets 🍹🧊

  • Ingredients: 2-3 bags of your favorite tea (e.g. green tea, fruit tea, hibiscus), fresh fruit (e.g. peach slices, oranges), ice cubes.
  • Preparation: Brew the tea as usual and leave to infuse. Then leave to cool completely (preferably overnight in the fridge). Add fresh fruit and ice cubes when serving.

Why is it so good? No added sugar, full of antioxidants and super invigorating. Green tea gives you a caffeine kick without the jitters.

2. light lunch heroes for quick energy ⚡️🥪

Who wants to stand at the stove at 30 degrees? These dishes are quick to make and require little or no heat.

The satisfying freshness kick: quinoa salad with watermelon & feta 🍉

  • Ingredients: 100g cooked quinoa, 1 cup diced watermelon, 50g feta (crumbled), a handful of mint leaves, 1/4 red onion (finely chopped), dressing made from olive oil, lime juice, salt and pepper.
  • Preparation: Leave the quinoa to cool. Mix all the ingredients in a bowl and pour over the dressing. Leave to stand briefly.

Why is it so good? Incredibly refreshing thanks to the melon, filling and rich in protein thanks to the quinoa and feta. The perfect sweet and salty mix for hot days. You can cook the quinoa the day before!

The instant cool-down: gazpacho in a jar 🍅

  • Ingredients: 400g ripe tomatoes, 1/2 cucumber, 1/2 green bell pepper, 1/4 red onion, 1 clove of garlic (optional), 2 tbsp olive oil, 1 tbsp red wine vinegar, salt, pepper, a little water (if necessary).
  • Preparation: Roughly chop all ingredients and puree in a blender until a fine soup is obtained. Chill well in the fridge. Pour into a drinking glass and enjoy.

Why is it so good? A cold vegetable soup that requires no cooking. Full of vitamins and incredibly hydrating. Ideal if you really don't have the time (or inclination) to cook.

The flexible filling master: veggie wraps with avocado & chickpeas 🥑🥙

  • Ingredients: Wholegrain tortilla wraps, 1 ripe avocado (mashed), 1/2 can chickpeas (mashed), fresh salad leaves, grated carrots, bell pepper strips, yogurt dill dressing (or hummus).
  • Preparation: Mash the avocado and chickpeas with a little lemon juice, salt and pepper. Spread the mixture on the wraps, then place the lettuce, carrots and peppers on top and drizzle with dressing. Roll up tightly.

Why is it so good? Quick to prepare, super adaptable (just use what you have in the fridge!) and no cooking utensils needed.

3. cool snack for in between ❄️🍎

If you get tired in the afternoon or feel peckish, reach for these light options.

The crunchy treat: berry yoghurt swirl (frozen) 🥣🍑
The prepared power breakfast: overnight oats with summer fruits

  • Ingredients: 50g rolled oats, 200ml milk (or plant-based milk), 1 tbsp chia seeds, 1/2 tsp cinnamon (optional), fresh berries, peach pieces or apricots.
  • Preparation: Put the oats, milk, chia seeds and cinnamon in a jar with a lid, stir well. Leave to infuse overnight in the fridge. Top with fresh fruit in the morning.

Why is it so good? A cold, nutritious breakfast prepared the night before. Perfect if you don't have time in the morning or simply want to enjoy something cold. It fills you up and gives you long-lasting energy.

Don't let the temperature get you down. The right food will keep your head clear and your stomach happy! 😊

With this in mind: stay responsible, get inspired and enjoy the summer - even when working from home! 🍍⛱️
